Quinoa Salad with cranberries and lime

Make this unique every time you want a fast salad.  You can change up the veggies you add and make it your own!

Ingredients:

2 cups quinoa – cooked in 2 ½ cups water – set aside to cool
Grated raw beet (use 1 small beet)
grated raw carrot (use 1 medium sized carrot)
chick peas – 1 can rinsed and drained
pumpkin seeds (or any alternative like hemp or sunflower, or chopped nuts)
1/2 cup dried cranberries
handful chopped fresh parsley or cilantro – whichever you prefer or use both

Dressing – mix to taste and them combine with salad ingredients
juice of 1 lemon or use lime if you prefer
2 teaspoon maple syrup
1 tsp ground cumin
2 tbsp tamari soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
salt to taste
